How to Prepare Tomato Soup

Ingredients

  • 2 tbsps of olive oil
  • 2 chopped up onions
  • 6 diced garlic cloves
  • 1 tbsp of oregano
  • 1 tbsp of basil
  • 2 cans of diced tomato
  • 1 tsp of sugar
  • 300 ml of chicken or vegetable broth
  • 100 ml of milk
  • 100 ml of cream
  • Salt & pepper (to your liking)
  • Parmesan cheese (to your liking)

Instructions

  1. The first step is to heat up a cooking pot at a medium intensity with the olive oil. Then, add the onions in and wait until they turn transparent.
  2. After the onions have reached the right point, you should include the garlic, oregano, and basil on the pot. Let all of these cook for 2 minutes at a low heat.
  3. Once you’ve let the other ingredients soak up the oils and flavors, you’ll have to incorporate the tomatoes. Use this time to sprinkle the sugar, salt and pepper into the mix.
  4. The next step is to pour in the broth, turn up the heat, and let it sit there until it boils. Once it does, bring the heat to a low intensity, put a lid on the pot, and let it cook for 10 minutes.
  5. When the time has passed, remove the cooking pot from the flame and allow it to cool down.
  6. Then, you should pick out (with a spoon or fork) any small branches from the basil or oregano that may be floating around.
  7. For this next step, you’ll need to get a hand blender and blend all of the ingredients until you get a homogeneous, thick chowder.
  8. Take the soup back to the stove and add in the cream and milk. Let it heat up for a few minutes.
  9. Finally, all you have to do now is add in the parmesan cheese to give it extra flavor. You can even add some croutons onto the soup or toast on the side to make it even yummier.
