 If you find yourself ready for spring, though we can’t change the temperatures outside, Great Harvest in Goldsboro would certainly like to help you bring spring to your home, with one of our favorite spring salad recipes. You should have no problem finding these delicious vegetables in your grocery store or local market, and perhaps you can find the flowers in your own garden.You won’t regret making this delicious recipe for yourself or share it with a friend.

You’ll need:


  •  Thinly sliced radishes-to add a spicy kick
  • 4 small whole heads of lettuce-butter lettuce is a great choice
  • 1 ½ tbs champagne vinegar
  • 2 tsp thinly cut chives
  • 1 tbs finely chopped dill, tarragon and/or fennel
  • ¼ tsp salt
  • ⅛ teaspoon pepper-or to taste
  • ⅓ cup olive oil
  • 4 inch long chive piecessmall sprigs of dill, tarragon and/or fennel
  •  Edible flowers-violas, roses, or carnations

How You’ll Prepare It:


  1. Use entire small lettuce head, place in bowl, tuck in the large pieces of spice, and add flowers, radishes, and serve with dressing on the side
  2. Cut the ends of the lettuce and rinse, leave lettuce attached at base
  3. Wrap in towel and crisp in the refrigerator for 15 minutes
  4. In a small bowl, add vinegar, chives, oil, and other chosen spices
You can always cut the lettuce into smaller pieces, if you are not as concerned with the salad looking like an actual boquete.
